Plain-English recipes for the way you actually make coffee. Pick your brewer, follow the ratio, adjust to taste. No gatekeeping.

How to read these recipes

Every recipe below leans on three numbers. Here's what they mean.

Ratio is coffee to water, by weight. "1:16" means 1 gram of coffee for every 16 grams of water. So a 25 g scoop of coffee wants about 400 g of water (25 × 16). More water, weaker cup. Less water, stronger.

Dose is just how much coffee you start with, in grams. That's the first number you weigh out.

Grind is how fine you crush the beans. No fancy grinder? Eyeball it against something in your kitchen:

  • Coarse — coarse sea salt (French press, cold brew)
  • Medium — beach sand (drip machine)
  • Medium-fine — table salt (pour-over, AeroPress)
  • Fine — powdered sugar (espresso)

A kitchen scale makes all of this easy, but you don't need one to start. Get close, taste, and adjust: too weak, use less water next time; too strong, add more coffee.

Pour-over

Cold brew

Smooth, low-acid, and brewed overnight. Make a coarse-ground concentrate, then dilute it about 1:1 over ice — or pour it straight for a bolder cup.

If your coffee tastes off, it's usually the ratio

Before you blame the beans, weigh them. Most "bad" cups are just too little coffee for too much water. Start at 1:16 and adjust from there.
